Korean Spicy Noodle Soup Recipe

Ingredients:

  • 1 cup cabbage, chopped
  • 2 Tbsp soy sauce
  • 1 tsp chopped garlic
  • 1 tsp sesame oil
  • 2 Tbsp chili pepper flakes (kochukaru)
  • 4 cups water or soup stock
  • 6 oz protein (sliced brisket, rotisserie chicken, canned tuna or raw tofu sliced into chunks)
  • 1 Tbsp chili pepper paste (kochujang)
  • 1 egg, beaten
  • 8 oz Tofu Shirataki (1 package), udon, or sweet potato noodles
  • ½ scallion, chopped (optional)

Preparation:

  1. Cook noodles according to package directions, cut into 4 inch lengths, and set aside.

  2. In a soup pot over medium heat, stir fry cabbage with soy sauce, garlic, sesame oil, and chili pepper flakes for a few minutes, or until the leaves begin to look transparent.

  3. Add water or broth and bring to a boil.

  4. Reduce to a simmer and stir in chili pepper paste.

  5. Add protein (except for tofu) to pot and wait for soup to simmer again.

  6. Slowly stream in beaten egg.

  7. After 15 minutes, add in noodles (and tofu if using) and cook for 4 more minutes.

  8. Salt to taste and garnish with scallions is using.

There are numerous alcoholic beverages popular in Korea aside from its traditional liquor soju. The top 3 popular beers (mekju) are Cass, Hite and OB Lager.

Cass
Cass Breweries was taken over by Oriental Breweries in 1999 which the company makes OB larger and Cafri premium larger. Cass is a 5.0% larger which is one of the 3 most popular beers in Korea. Sold bottled or on tap in Korea, it’s a fairly pale larger reminiscent of many an Asian pale larger.

Hite
The Hite brewery is the largest of the South Korean brewers, brewing 9 different beers including Hite, Hite Prime, Hite Stout, Hite Exfeel (light, low cal beer) as well as being the local maker of Fosters and Carlsberg. The popular 4.5% Hite is a micro filtered lager that has a fresh taste which also is the first beer to include a thermometer mark on its label.

OB Lager
This 4.7% Lager has a light golden color and a flavor reminiscent of many Asian beers that use rice in the grain. Owned by Oriental Breweries, there are 3 other types of OB, including a 4.4% new larger and light (low cal) as well as a non alcoholic OB variety. Oriental also makes the 4.0 % Cafri premium larger.

Fact: The legal drinking age in Korea is 19 years old.

Steamed Rice

Bop, or steam rice, is the staple food for most Koreans and consumed almost with every meal. It can be cooked by boiling or steaming and it is usually cooked in just as much water as it absorbs. Most Koreans use rice cookers which is a simple, effective way to cook rice. and also helps keep the rice warm after it's cooked. There's no need to watch the rice cooker since this appliance comes with an automatic timer that clicks when the rice is ready.

Some prefer to soak rice grain prior to cooking which can decrease cooking time, minimize exposure to high temperature and thus decrease the stickiness of the rice. For some variety of rice grains, soaking can improve the texture of the cooked rice by increasing expansion of the grains. It can be cooked alone or with other grains such as millet or barley and some also prefer to add chestnuts, beans or even vegetable such as green peas. Nowadays, electric rice cookers simplify the process of cooking rice, especially when enoying bop on a daily basis.

Cooking Directions

Note: Most rice cookers come with a measuring cup which is not the same size as the standard US cup measurement of 240 ml or 1 cup. The cup will most likely be an industry-standard cup meansurement which is approximately 180 ml or ¾ cup when compared to US standards. Keep in mind that 180 ml or ¾ of uncooked rice grains will generate roughly 1½ cups (US) of cooked rice.

  1. Place desired amout of rice grain into pot - rice cooker pot or cooking pot.
  2. Run cold tap water until it covers rice and lightly swish rice grains back and forth with your hands couple of times. Do not scrub the rice too hard as it can lose its nutrients.
  3. Discard water by tipping the pot at an angle to drain excess water out.
  4. Repeat steps 2 & 3 three to four times until water clears out. However, do not rinse until water becomes crystal clear since you don't want to wash away nutrients. On your final wash, drain out as much water as possible.
  5. If cooking on a regular cooking pot, refill pot with the same amount of cups of rice you used, with an additional ½ cup of water. If cooking in a rice cooker, there are graduated marks on the inside indicating how much rice and water should be added.
  6. If desired, soak the rice grain in water for thirty minutes prior to cooking. This is not required but some prefer it.
  7. Set rice cooker on and serve when ready. If cooking on a stovetop, set heat to very low and cook for 15-20 minutes with lid on. Check if rice is fully steamed and ready to eat prior to serving.
